Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped

- 2 cups cooked chicken, shredded
- 8 ounces (225g) egg noodles
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion, sliced carrots, and sliced celery. Sauté for about 5 minutes or until the vegetables start to soften.
- Add the minced garlic and continue to cook for another 1-2 minutes until fragrant.
- Pour in the chicken broth and add the bay leaf, dried thyme, dried parsley, black pepper, and salt. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for about 10 minutes to allow the flavors to meld.
