Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup brined capers, drained
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons unsalted butter

Instructions:

  1. In a shallow dish, mix the flour, salt, and black pepper together.
  2. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for about 4-5 minutes per side, or until they are golden brown and cooked through.
  5. Remove the chicken from the skillet and transfer it to a plate. Cover to keep warm.
  6. In the same skillet, add the chicken broth, fresh lemon juice, and brined capers.
  7. Scrape the browned bits from the bottom of the skillet and let the sauce simmer for 2-3 minutes to reduce slightly.
  8. Stir in the unsalted butter and chopped fresh parsley until the sauce is smooth and well combined.
  9. Return the cooked chicken breasts to the skillet, turning them to coat them evenly with the sauce.
  10. Let the chicken simmer in the sauce for an additional minute to heat through.
  11. Remove the skillet from heat.
  12. Serve the Chicken Piccata with the flavorful lemon-caper sauce poured over the top.
  13. Garnish with extra chopped parsley for a pop of color and fresh taste.
