Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cooked and diced
  • 1/3 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 2 unbaked 9-inch pie crusts

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and carrots. Cook until the vegetables are tender.
  3. Stir in the all-purpose flour, salt, black pepper, and dried thyme, mixing until well combined.
  4. Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens and becomes smooth. Let it simmer for a few minutes.
  5. Add the cooked and diced chicken and frozen peas to the skillet, stirring to evenly distribute the ingredients.
  6. Remove the skillet from heat.
  7. Place one pie crust into a 9-inch pie dish. Pour the chicken mixture into the pie crust.
  8. Cover the pie with the second pie crust, and seal the edges by pressing them together with a fork.
  9. Make a few slits on the top crust to allow steam to escape during baking.
  10. Bake the Chicken Pot Pie in the preheated oven for 30-35 minutes, or until the crust turns golden brown and the filling is bubbly.
  11. Remove the pie from the oven and let it cool slightly before serving.
