Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cooked and diced
- 1/3 cup unsalted butter
- 1/3 cup all-purpose flour
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 2 unbaked 9-inch pie crusts
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and carrots. Cook until the vegetables are tender.
- Stir in the all-purpose flour, salt, black pepper, and dried thyme, mixing until well combined.
- Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens and becomes smooth. Let it simmer for a few minutes.
- Add the cooked and diced chicken and frozen peas to the skillet, stirring to evenly distribute the ingredients.
- Remove the skillet from heat.
- Place one pie crust into a 9-inch pie dish. Pour the chicken mixture into the pie crust.
