Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice
  • 4 cups vegetable or chicken broth
  • 1 cup sliced mushrooms (such as cremini or shiitake)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a saucepan, heat the vegetable or chicken broth over medium heat. Keep it warm but not boiling.
  2. In a large skillet or saucepan, heat the olive oil over medium heat.
  3. Add the diced onion and sauté until it becomes translucent.
  4. Add the minced garlic and sliced mushrooms to the skillet, and cook until the mushrooms are tender and slightly browned.
  5. Stir in the Arborio rice, making sure it's well-coated with the oil and mushrooms. Cook for 1-2 minutes to toast the rice slightly.
  6. If using, pour in the dry white wine, and stir until it's mostly absorbed by the rice.
  7. Ladle in a small amount (about 1/2 cup) of warm broth into the skillet, and stir continuously until it's absorbed by the rice. Repeat this process, adding one ladle of broth at a time and stirring frequently.
  8. Continue adding broth and stirring until the rice becomes creamy and tender, but still slightly firm in the center (this should take about 20-25 minutes).
  9. Remove the skillet from heat, and stir in the grated Parmesan cheese and unsalted butter until they melt into the risotto.
  10. Season with salt and pepper to taste.
  11. Garnish the Mushroom Risotto with chopped fresh parsley.
  12. Serve the creamy and flavorful Mushroom Risotto as a delightful side dish or a comforting main course!
