Shrimp Scampi

Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup (60ml) white wine
- 1/4 cup (60ml) chicken or vegetable broth
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
- 8 ounces (225g) linguine or spaghetti
- Grated Parmesan cheese (optional, for serving)
Instructions:
- Cook the linguine or spaghetti according to the package instructions in salted boiling water until al dente. Drain the pasta and set aside.
- While the pasta is cooking, in a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1 minute or until the garlic becomes fragrant.
- Add the shrimp to the skillet and cook for 1-2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
- Deglaze the skillet by pouring in the white wine and chicken or vegetable broth. Scrape the bottom of the skillet to incorporate any browned bits.
- Simmer the liquid for a couple of minutes until slightly reduced.
- Stir in the fresh lemon juice and chopped parsley.
- Reduce the heat to low, and add the butter to the skillet. Swirl the skillet gently to melt the butter and create a creamy sauce.
- Season the sauce with salt and black pepper to taste.
- Return the cooked shrimp to the skillet and toss them in the sauce to coat.
- Add the cooked linguine or spaghetti to the skillet and toss everything together until the pasta is well coated with the shrimp and sauce.
- Remove the skillet from the heat.
- Serve the Shrimp Scampi immediately, garnishing with additional chopped parsley and grated Parmesan cheese if desired.
