Ingredients:

  • 1 lb (450g) boneless chicken thighs or tofu, cut into bite-sized pieces
  • 2 tablespoons green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken or vegetable broth
  • 1 tablespoon fish sauce or soy sauce for a vegetarian option
  • 1 tablespoon brown sugar
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, sliced
  • 1 cup bamboo shoots (optional)
  • 1 cup fresh basil leaves
  • 1 lime, juiced
  • Cooked jasmine rice, for serving

Instructions:

  1. In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the green curry paste and cook for a minute or until fragrant.
  2. Add the chicken or tofu pieces to the skillet and cook until browned on all sides.
  3. Pour in the coconut milk and chicken or vegetable broth. Stir in the fish sauce (or soy sauce) and brown sugar. Let it simmer for 10 minutes to allow the flavors to meld together.
  4. Add the sliced red bell pepper, zucchini, and bamboo shoots (if using) to the skillet. Continue to simmer for another 5-7 minutes, or until the vegetables are tender.
  5. Stir in the fresh basil leaves and lime juice, and let it cook for an additional minute.
  6. Remove the Thai Green Curry from heat.
  7. Serve the curry over jasmine rice and garnish with additional basil leaves.
