Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb (450g) ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Rinse them under cold water and set aside.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the diced onions and sauté until they become translucent.
  5. Add the minced garlic, ground beef or turkey, dried oregano, dried basil, salt, and pepper to the skillet. Cook until the meat is browned and cooked through.
  6. Stir in the diced tomatoes, diced zucchini, and corn kernels. Cook for a few more minutes until the vegetables are tender.
  7. Remove the skillet from heat, and stir in the cooked rice and half of the shredded cheese until everything is well combined.
  8. Stuff each bell pepper with the meat and rice mixture, pressing it down gently with a spoon to fill them evenly.
  9. Place the stuffed bell peppers in a baking dish, and cover the dish with aluminum foil.
  10. Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender.
  11. Remove the foil, sprinkle the remaining shredded cheese on top of each pepper, and bake for an additional 5 minutes until the cheese is melted and bubbly.
  12. Remove the stuffed bell peppers from the oven, and let them cool slightly before serving.
  13. Garnish with fresh parsley for an extra burst of color and flavor.
