Ingredients:
- 20-24 large white mushrooms, stems removed and reserved
- 1/2 cup Italian breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1/4 cup olive oil
- 1/4 cup cream cheese, softened
- Salt and pepper to taste
- 1/4 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
- Remove the stems from the mushrooms and finely chop them.
- In a mixing bowl, combine the chopped mushroom stems, Italian breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, olive oil, and softened cream cheese.
- Season the mixture with salt and pepper to taste and stir until well combined.
- Take each mushroom cap and fill it with a generous amount of the stuffing mixture, pressing it down gently.
- Arrange the stuffed mushrooms on the prepared baking sheet.
- Sprinkle shredded mozzarella cheese on top of each stuffed mushroom.
- Bake the stuffed mushrooms in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the cheese is melted and lightly browned.
- Remove from the oven and let them cool slightly before serving.
